Radish & Arugula Crostini with Brie

Hello,
I hope you had a fantastic Mother's Day celebration with your family yesterday! 

As a diet meal plan; I always look for food that is tasty, healthy and look pretty at the same time. Usually I go for a small size food. And this one fall into that category. I feel like  I am not eating a large meal but at last feel full. And I love finger food very much!

I think radish is super healthy for your body. It has anti cancer properties, high in vitamin C, good source of potassium and calcium therefore regulate your blood pressure.

Radish also tastes delicious; crunchy and nutty. I feel the earthy  tastes in my mouth which I love, by the way!












:Recipe:

Radish and Arugula Crostini with Brie

~ 16 (1/2 inch thick) slices diagonally cut French baguette
Cooking spray
~ 1-1/2 cups sliced radishes
~ 1 tbsp extra-virgin olive oil
~ 1 tbsp fresh lemon juice
~ 1/4 tsp freshly ground black pepper
~ 1/2 tsp salt
~ 4 ounce Brie cheese (about 1/2 cup)
~ 2 cups baby arugula leaves

1. Preheat oven to 400 deg.
2. Arrange bread slices on a baking sheet; coat with cooking spray. Bake at 400 deg. for 5 minutes or until golden brown and toasted; cool.
3. Combine radishes and next 4 ingredients (through salt) in a medium bowl, and toss to coat.
4. Spread each bread slice with about 2 teaspoons cheese; top with a single layer of arugula and layer of radish slices.
